Carol's Turkey Enchiladas (great for leftover turkey)
3 cups chopped cooked turkey
1 cup chopped green or red bell pepper
1 8oz. pkg. cream cheese, cubed
1 cup Salsa (divided)
8 6" flour tortillas
12 oz. Velveeta cheese, cut into cubes or shredded cheddar cheese
1/4 cup milk
Preheat oven to 350 degrees. In a saucepan over low heat, stir turkey, bell pepper, cream cheese and 1/2 cup salsa until cream cheese melts. Spoon 1/3 cup mixture down the center of each tortilla and roll up. Place tortillas, seam side down, in a lightly greased 9x13 inch baking dish. In a saucepan over low heat, add cheese and milk and heat until smooth. Pour sauce over tortillas and cover with foil. Bake for 20 minutes, or til heated through. Pour remaining salsa over enchiladas and serve.
