Gracie's Grandma's Rice Pudding
I guess this is really a fall or Winter recipe but it's worth the trying. I have not tasted any rice pudding that even comes close to measuring up to this delicious treat.
1/2 cup regular rice
1 cup water
Cook in heavy bottom until water is absorbed
Add
4 cups milk and 1/4 cup butter or half a stick. also add scant 1/2 tsp. salt. cook over low heat simmer until thickened like gravy. Remove from heat
Add
2 eggs well beaten
1/2 cup sugar
1 1/2 tsp, vanilla
1/2 cup raisins optional or small can crushed pineapple,may be added at this time. Heat from rice mixture cooks the eggs. Pour into serving bowl and sprinkle top with sugar & cinnamon mixture.
I beat my eggs, add my sugar, raisins and vanilla and let them set while the rice is cooking, This helps soften the raisins.
This recipe came from Dinah Shore Show but taste very similar to my Grandma's.
