Mic's Rice Pudding
1/2 cup rice
3 cups milk
3 eggs
3 tsp. cornstarch
3/4 cup sugar (or more to taste)
1/4 tsp. vanilla (1/2 tsp. if you like..taste)
Cook rice according to package directions. Blend all other ingredients thoroughly in blender (or blend well with an egg beater). Put in large pot. Add the cooked rice and cook on top of stove until mixture boils and thickens (stir constantly). Put in large bowl. Let cool and sprinkle with cinnamon and nutmeg. (You may add raisins if you wish)
