Jo's Quesadillas
Simple and easy to make.
Butter one side of large flour tortilla. Place in large skillet. Fill with your favorite cheese (shredded) . Butter another tortilla and place on top of the cheese, buttered side up. When bottom tortilla is lightly browned and cheese had begun to melt , flip quesadilla over . Lightly brown that tortilla and be sure cheese has melted sufficiently to hold two tortillas together.
Variation:
Canned or cooked chicken pieces, cheese, and green onion.

Refried beans, cheese, green onion, and a thin layer of salsa
Quesadillas can be cut into "pie" wedges and served with salad, salsa, sour cream.
