Carol's Delicious Macaroni Salad
Ingredients:
1 lb. cooked pasta (preferably smaller varieties)
2 cans of drained can tuna chopped
2 fresh ripe tomatoes
onion powder to taste
salt to taste
parsley to taste
some Balsamic vinegar
plenty of low fat mayonnaise
Add cooked pasta to large bowl. Add chopped tuna, tomatoes cut into chunks, and rest of ingredients. Blend in mayonnaise and spices until well-mixed.
Refrigerate until cold. Serve with your favorite sandwich, chicken or burger. Salad is so hearty it can even be eaten as a main course on a bed of lettuce and your favorite garnish. Enjoy!
