Carol's Hot Chicken Salad
2 cups cooked chicken pieces (I like all white)
1 cup diced celery
1/2 cup slivered almonds
1 Tbsp. lemon juice
3 hard boiled eggs
1 cup cream of mushroom soup
1/2 onion, minced
1/2 tsp. salt
1/4 tsp. pepper
1/2 cup mayonnaise
2 cups Ritz cracker crumbs
Preheat oven to 350 ? F.
Combine all of the ingredients, except for the crackers, in a greased casserole dish.
Top with crushed Ritz crackers.
Bake for 20 minutes.
This is good hot and also cold the next day, made into sandwiches. Either way, it's a great dish (especially good for a covered dish supper at church)
