Joanie's Hamburger Barley Soup
1 1/2 pds. hamburger...fried & drained
8 cups water
1 pd. can diced tomatoes
2-3 cans V8...5.5 oz.
2-3 tblsp. soy sauce
1 tsp. cayenne red pepper
salt/pepper to taste
1/2 small cabbage...grated fine
1/2 cup Pearl Barley
1 cup green peppers, red peppers, onion and celery...diced
Add all to soup pot. Bring to a boil & simmer for one hour.
Add to soup pot the following:
2 medium potatoes...diced
1 cup carrots...sliced
1 pd. can of string beans...drained
Cook on low heat till carrots/potatoes are done.
For more liquid add 1 or 2 more 5.5 oz. cans of V8.
This soup was born one day that I was cleaning out the refrigerator. It was so loved by my family that I wrote all the ingredients down immediately after dinner. It also freezes well.
