Angela's Grilled Fish!!
My husband came up with this great meal to cook on the grill and the clean up is a snap!
1 lb. Catfish
1 green pepper (sliced)
1 red pepper (sliced)
1 yellow pepper (sliced)
1 zucchini (sliced)
1 onion (sliced)
1 lemon (sliced)
olive oil
garlic olive oil spray pepper
Take a large piece of aluminum foil spray it with the garlic oil spray. Lay 2 slices of lemon next, the catfish on top of the lemon. Take the sliced onion and layer some over the catfish. Follow that with layers of peppers. Take the olive oil and drizzle it over the fish and peppers. Follow that with sliced zucchini and pepper to taste. Wrap it loosely in the foil and pop it onto the grill for about 15-20 mins. (depending on temp of grill.) Once finished remove from foil serve with a rice pilaf and a bottle of white wine. We prefer Caymus Conundrun (spelling??) Tastes wonderful and its light.
With the extra veggies we place them on a large piece of aluminum foil sprayed with garlic olive oil, a slice of lemon, pepper and some olive oil. Fold it loosely and place on the grill with the fish!
