Dudy's Chile Chicken soup
1 and a half pounds boneless skinless chicken breasts(cut up into cubes)
2 cans of kidney beans
2 cans of diced tomatos
2 cups of water
1 large onion chopped
1 large bell pepper chopped
6 tbs. fat free sour cream
6 tbs.shredded reduced fat cheddar cheese
Brown the chicken until done and put it in a crockpot. Add all the other ingredients on top of this and put the water in last. Let cook in crockpot for 7 hours or more and serve with tortillas After putting in your soup bowls to serve put shredded cheese on top and a little sour cream. I also have started putting in my soup about a cup of Picante sauce and my family loves it because it gives the soup a little spice.
