Mary Ann's Chicken Scampi
1 lb. boneless, skinless chicken breast
6-7 cloves fresh garlic, sliced thin
1 stick butter or margarine
Juice of 1 lemon
1 cup chicken broth
1 box or bag broccoli florets
1 cup cooked rice
1 tbsp olive oil
parsley
Add olive oil, garlic, and cut up (cubed) chicken breast in pan to saute till chicken
turns white, add stick butter or marg, add parsley, chicken broth, let saute
and add broccoli and lemon juice, serve over cooked rice.
