Carol's Cheese Cake
Crust: 12-18 graham crackers crushed ( about 1 3/4 cup)
2 tablespoons sugar
1 teaspoon cinnamon
6 tablespoons melted butter
Add all ingredients and mix well. Press into a spring form pan along bottom and sides.
Filling: 3 lg pkg. cream cheese (Philadelphia Cream Cheese)
1 1/4 cups sugar
2 eggs
1/2 teaspoon vanilla
Cream the cream cheese until light and fluffy. Add the eggs, sugar and vanilla. Beat until light and fluffy. Spoon (pour) filling into crust. Bake for about 25-30 minutes at 350 degrees.
Topping: 1 pint sour cream
2 tablespoons sugar
1/2 teaspoon vanilla
Mix well. Pour topping over filling and bake an additional 5 minutes at a high temp. 450 degrees. Hint, when pouring the filling onto the the cheese cake that just came out of the oven start at the outter edge and work into the center so it will not all end up in the center and cave in. You can add fruit toppings on the cheese cake if you wish. I make this for our family all the time and have for over 30 years, they love it. It is simple but delicious... Also when taking the pan out of the oven be careful when handling the pan since the bottom can spring up and every thing can pop out and go all over the counter and floor which happened only once and then you learn...
